A short history of the sizzler in Bangalore

The sizzler travelled to India with mid-century Bombay's Iranian cafés and Parsi kitchens, then found a second home in Bangalore's Brigade-Road-era steakhouses. Cast-iron plates and wooden bases became a fixture of the city's dining rooms — a format equally at home with a hand-cut steak, a stack of vegetables, or paneer.

Today, "sizzlers Bangalore" is a search that returns dozens of restaurants. What separates them is rarely the protein — it's the plating, the timing, and the sauce that hits the plate at exactly the right moment.

Why the cast-iron plate matters

A sizzler is engineered around one moment: the pour. The plate is heated far past a normal pan — hot enough that a splash of butter and sauce hitting the surface flashes into fragrant steam. That first hiss is the reason sizzlers are almost always plated table-side. Serve it in the kitchen and the theatre is gone by the time it reaches the guest.

Most sizzlers share a common architecture: a bed (rice, noodles or mash), a protein (steak, chicken, prawn, paneer, or a vegetable stack), a set of accompaniments (sautéed greens, roasted vegetables, a wedge of lemon), and a finishing sauce (pepper, mushroom, garlic-butter, peri-peri).
